This dish is extremely indulgent, so it is particularly recommended for tough days. As they say, when the going gets tough, the tough get whipping. The best part? You can use as much coffee as you like, to make it stronger.
Coffee mousse by Pooja Dhingra
White Chocolate, chopped 200gm
Butter, softened 25gm
Instant coffee powder 15gm
Fresh cream 100ml
Whipped cream 100ml
Place the chopped white chocolate in a medium-sized bowl.
In a heavy-bottomed saucepan, boil the fresh cream and instant coffee powder together. Take the pan off the heat and pour the mixture over the chopped white chocolate.
Whisk the mixture till it turns smooth, and add softened butter. Mix well, and then fold in whipped cream, whisking to incorporate.
Pour the mousse into glasses and chill in the fridge for at least two hours before serving.
